This is one of my favorite things to eat as a side dish, as a bed for my favorite meat dishes, or on it own. It is so versatile. You may add sliced meat and enjoy it as a main course. You may also add low carb noodles and create Lo mien or broth to make a wonderful soup. It pairs well with just about anything: smoked turkey, roast, steak, chicken, fish, etc.
